Fresh Cherry Pie by The Backyard Country Girl

CHERRY PIE

This Backyard Country Girl knows it Summertime when its time to make Fresh Cherry Pie! These beauties are from my daughter's, husband's, family orchard, Oneto Cherries - whew! Gorgeous and Delicious! This recipe is perfect for any kind of cherry, sweet or tart. Some people are kinda nutso about this, but I say just adjust the amount of sugar you add to your own liking. I'll just tell you up front that there is just one problem with this post... the final pie never made it to the photo shoot before being devoured. Sorry, you'll just have to imagine the golden flaky crust oozing deep dark cherry syrup, Oh My!

FRESH CHERRY PIE
1 1/4 Cups Sugar
1 1/2 tablespoon flour
1/4 teaspoon salt
1 quart fresh, washed and pitted cherries (for sweet cherries use less sugar - too taste) Backyard Country Girl used a plastic drink straw to pit the cherries.



PIE CRUST
2 cups sifted flour
3/4 teaspoon salt
2/3 cup shortening
4-6 tablespoons cold water
Sift flour and salt together and cut in shortening with two knives - Backyard Country Girl takes two butter knives blade side facing out with flat sides together, then crisscross making X marks through the mixture. Add water, using a small amount at a time until completely mixed together.
Line pie pan with rolled out pastry crust, Backyard Country Girl now browns the crust just a little before adding the pie filling. Bake at 450o 10 minutes, then pour in the cherry pie filling. Top with a Wagon Wheel pie crust shape, and drop a hunk of sweet butter at each opening of the wheel.
Reduce oven temperature to to 350o bake 25 minutes (or until the pie crust is a light golden color)
